Sea Lovers Gin

Sea Lovers Gin is a distinctive and delicious contemporary gin that subtly marries marine ingredients with more traditional botanicals, conjuring the essence of the sea into your glass. The wild harvested North Island kelp gives a lovely umami complexity to the nose and serves as a counterpoint to the brightness of the lime and rosemary. The palate is full and crisp with the oyster shells bringing a sophisticated minerality.

Sea Lovers Gin is distilled in a 1000 litre hand beaten copper pot still, using a combination of maceration and vapour infusing techniques in a single shot process. The spirit is then rested for three weeks to allow the flavours to marry and settle before proofing down to bottle strength slowly over several days. All aspects of distillation and production are carried out at our distillery in Auckland, New Zealand.

THE SEA'S INFLUENCE

Explore the inspiration behind our unique flavour profile.

OYSTER SHELL
A surprising hero ingredient, our oyster shells are sourced from a sustainably focused farm in the unpolluted tidal waters at the eastern end of Waiheke Island in the Hauraki Gulf. The influence on the spirit is a subtle but unmistakable minerality and softness.
NORTH ISLAND KELP
An often overlooked but vitally important marine plant, kelp is a hero in a different sense and one that the world is only just beginning to appreciate. It grows at astonishing rates, capturing large amounts of CO2 as well as providing habitats for other marine life. As if that wasn’t enough it also tastes remarkable, providing just the right amount of complex umami (the fifth taste in addition to sweet, salty, bitter and sour) in our gin.
ROSEMARY
With a name that translates literally to “Dew of the Sea”, this humble herb can trace its origins back to the coastal Mediterranean region. Rosemary has a long and storied history of culinary use in human society and, within the context of our gin, acts as a charming, aromatic bridge between the salinity of the marine ingredients and the more earthly bound, brighter botanicals such as juniper and lime peel.
